Zingiber zerumbet, Ornamental Ginger, Pinecone Ginger

Uses: Xeriscaping, Edible, Forage, Medicinal. Native to : India, naturalized throughout the tropics.
     This plant is very striking even in a landscape filled with striking plants. It's no wonder the plant has traveled from India to now exist worldwide in tropical areas. The leaves grow several feet tall even in my shady, rainfall-irrigated  front yard. It does seem to prefer dampish, shady places, and would be a good choice for understory use.
     The leaves die back in the fall, but the plant returns from the rhizomes underneath the soil surface. The rhizome itself is a ginger and can be used in any way the ginger root is used. The leaves can be used as an herbal flavoring for cooked food. The red flower, not shown here, can be squeezed and the juices used as a natural shampoo, as it is high in saponins and smells wonderful.
     Medicinally the rhizome is used worldwide to treat inflammation and indigestion disorders. A good deal of research has been conducted, and the folk uses for soap ginger do hold up to science. Additionally, it has beneficial properties to maintain health, such as tumor and microbial suppression.
     I was unable to locate any research on whether soap ginger greens are safe to feed livestock, but since they are safe for humans, they are a good bet. I have given small quantities, about one leaflet a day, to my rabbits with no ill effects, in fact, even dried they are relished as a tasty treat. One can only assume that the leaves are completely safe since they are eaten by humans. (They ate one of the flowers too, with no problems!)

Common Orange Honeysuckle, Tecoma capensis

Uses : Xeriscaping, Wildlife.  Native to: Africa.
     This is a very easy to grow and maintain shrub which sends up canes. In the winter and early spring orange flowers dominate the scape, as it tends to be one of the few plants that bloom at that time of year. Bees and hummingbirds are attracted to the large, drooping, trumpet-shaped flowers.
     It needs no care once established, other than to yearly trim the canes that appear in unwanted areas. Orange honeysuckle thrives in full sun. It can be seen hanging on fences right next to busy roadways, and is an ideal plant for that situation. It normally will grow about 4 feet tall unless a fence or other structure is provided. It can grow a single can about 12-15 feet with support.
     Because it grows so easily along a fence, it makes an ideal barrier for privacy. It is much much less invasive than bamboo, and has the orange flowers which attract wildlife. The leaves will remain thick and green all year, but the plant may die down during a year of several bad frosts. Doubtless it would grow even better in South Florida.
     Flowers can also be yellow or pinkish-orange, depending on the variety.
     Orange honeysuckle is known to be somewhat salt-tolerant.
     There is very little information on whether orange honeysuckle can be used a forage source, but it is known that wild rabbits do not prefer the other members of the honeysuckle family.

Antique Research on Floridian Rabbit Forages


    A biology research paper, written in 1934, and published in the Journal of Mammalogy in 1936, discusses the diets and habitats of the Florida Marsh Rabbit. Unfortunately the paper is not available for public viewing, but I would like to share with you the information gleaned from the rabbits.
     About 9 rabbits were captured from Newnan's Lake area, east of Gainesville, Florida, and fed plants found in the surrounding habitat. Sixty-four different species of plants were offered. Some were eaten right away, others eaten only when hungry, and others were not even on pain of starvation (yes, bunnies died during this experiment).

Hernando County to finally allow chickens in backyards

     In an amazing victory for personal liberty the other day, commissioners voted unanimously to allow backyard chickens in residential areas of Hernando County. Areas which have additional zoning restrictions such as named or incorporated areas with HOA's still have their own problems.
     There is going to be some time taken to decide how many chickens and where coops can be located. I'm unclear on exactly who is deciding these issues, also it brings up more questions like chicken culling on your own property. Cleanliness. Size of fencing. Proximity to easements. Animal control.
     So when can I get my duck?  :)

Preparing to Raise Rabbits in Florida

     As we try to move toward a more sustainable urban landscape, we will be putting rabbits in the backyard. We decided to try rabbits because fowl are illegal in this suburb. There are a lot of great reasons to raise rabbits though, and a huge one is that eat leafy stuff that we cannot, and turn that leafy waste into very usable fertilizer.
     Not a lot of information can be found about heat stress in rabbits, but the conventional wisdom says that too much heat decreases their productivity and can lead to dying off. We may have to implement a rabbit free summer zone if the heat is too much for them.
     Rabbits need protection from the sun and rain, and should not be allowed to stand on wastes.

     Traditionally rabbits should be given five square feet of cage space. We have turned some sturdy, large dog crates into rabbit cages by lining the floors with a mesh that should provide adequate drainage and feet protection. Chicken wire is not recommended for rabbit cages due to the larger size and feet damage issues, and that rabbits have been known to escape through it. Our cages are tied down to concrete block, for now, and secured with locks to prevent theft (after the break-in a few years ago, I'm not taking any chances).
     At about 5-6 months old the doe can be bred. Conventional rabbit raising call for putting the doe in the bucks cage and then watch the first mating to be assured everything is going well, then afterward to return the does to her pen for an hour. Then let them be together again for another round. This is to ensure ejaculate quality and to prevent territorial fighting.
     Palpate the does 14 days after breeding to check for pregnancy. At 28 days after breeding, provide a nesting box for the little mama.  20” long x 11” wide x 10” high. Wean the kits at 6 weeks old and separate them from their mother. She can be re-bred at this time. At 10 weeks they should be fryer sized, and a few more weeks longer and they should roaster sized, which is not quite full-grown.
     Rabbits need a diet with about 15% protein for adequate growth and to avoid problems during gestation and lactation. Full grown adult rabbits need only about 13% protein. Most pellets provide about  13-18% protein. Rabbits also need long fiber, which is not adequately supplied in pellet form but is provided with the addition of regular grass, which most breeders recommend at about 2 cups per 5 pounds of rabbit per day. Beyond fiber, protein, and vitamins, rabbits do not need the addition of grains or fruits or vegetables, though these are okay to give in small quantities.
     The rabbit manure, which looks like little round pods, is pH neutral and can be applied directly to the garden or mixed into a manure tea. Some raisers use it for vermicomposting.

Greening the Suburb

     Victory Gardens are an important part of our cultural heritage as Americans, though largely unknown nowadays. During World War II, the government encouraged Americans to grow, hunt, and forage as much as they could in order to save domestic supplies for the war effort. Domestic supplies being food and other parts of the gross domestic product. Of course, times are different now. We export and import food like nobody's business, and indeed, people ignore food like it's not their business.
     I live in a food desert, and you probably do too. What would happen if there was no food at the grocery store, or if there was no grocery store? How long would it take for your family to be hungry? What would happen if Florida was cut off from the rest of the USA? How long would it take our population to feed itself, if we even could?
With the beans harvested, nothin' but Sorghum growin' on.
     Food production is a noble endeavor that should be embraced by the 99%. Humanity should take back the wasted space occupied by that unproductive grass and put in some plants more useful to us. Reclaim public grounds. Schoolyards could be growing greens for healthy kid lunches. Grassy pastures at parks and government buildings could be providing food for public food pantries. Prisoners could be providing their own fare and not draining on taxpayers.
     There are ways to do this sustainably without draining the aquifers and the taxpayers. But it has to start with one person at a time. Perhaps with your very own Victory Garden.

Bidens alba, From Worthless to Wonderful

Uses : Wildlife, Forage, Xeriscaping, Edible, Medicinal. Native to : Unknown, found throughout the tropics and subtropics.
     It wasn't very long ago that I used to detest this very prolific weed. It is a plant sexaholic, constantly spreading its genetic information all over my grass. I'm not a huge fan of grass, but I'm also not a fan of the place looking untidy, which is what Beggarticks does for you. It's a perennial that freezes to the ground every year and will spring up from its roots to shower your lawn, your neighbor's lawn, and the family down the street's lawn with seeds.
     In the past I removed this plant with impunity. It has a tiny shallow root system which makes it easy to pull out. Once removed, I hoped that a more beautiful or useful plant would find its way into that empty space, and within two seasons was somewhat successful. Four O' Clocks found their way into the entire front yard, covering the place with pink fragrance. But how I wish I had known that Spanish Needle would have been better to leave in place...
     Why the change of mind, you ask? This weedy herb is a favorite of butterflies and bees, but more importantly, rabbits love it. They eat Beggarticks before they eat the grass mixture, long before they go for the boring pellets. And if a plant is useful and invasive, please invade!
     It's edible by humans, too. Eat the leaves raw or cook away, and you'll have a nice green for the dinner table. Or add to smoothies, as I do.
     Medicinally it, and its cousin Bidens pilosa, are used in Peru to reduce inflammation and protect the liver. A study done in 2011 confirmed the hepatoprotective effects of Bidens pilosa in mice.
     A study done in 2011 in South Africa states that the crude protein content for Bidens pilosa is 19%, making it an excellent herb for growing rabbits to nosh on. It is also high in vitamins and antioxidants. They recommend it be eaten more and used more medicinally by humans.
     These plants were sustainably harvested early in the morning from above a storm water drain down the street. A lot of organic matter catches near the drains, and people tend not to try to hard to mow down into the mouth of the drain. Sustainable harvest implies that most of the plants were left to reproduce, and only a small fraction were taken. The whole time I was convinced someone was going to yell at me or at least question why I was carrying around weeds, but thankfully, I escaped un-reprimanded.

Harvesting Turtle

Gopher Tortoise, illegal to capture except by special permit, common is sandy long-leaf pine savannas, spend most of their time in long, deep burrows which provide habitat for other creatures and enable them to thermoregulate and avoid forest fires.

     The Florida Fish and Wildlife Conservation Commission (FWC) closely regulates the types and number of turtles that can be harvested from the wild for different purposes, including personal use (i.e. eating) or raising on your own land for later personal use. It is illegal to sell turtles taken from the wild in Florida, and that rule may apply to their meat as well so do be careful. 

 "Freshwater turtles can only be taken by hand, dip net, minnow seine or baited hook. Most freshwater turtles may be taken year-round. Taking turtles with bucket traps, snares, or shooting with firearms is prohibited. Softshell turtles may not be taken from the wild from May 1 to July 31. In addition, collecting of freshwater turtle eggs is prohibited.
    Some turtle farms depend on collection of wild freshwater turtles. With the new rule, certified turtle aquaculture facilities, under a tightly controlled permitting system, will be allowed to collect turtles to establish reproduction in captivity so that farms can become self-sustaining to lessen their dependence on collection of turtles from the wild.
Possession limits for the following turtle species and their eggs are as follows:
  • Loggerhead musk turtles - two
  • Box turtles - two
  • Escambia map turtles - two
  • Diamondback terrapins - two"

     Information on sea turtle harvesting is not listed on the FWC official site, which leads me to believe that it is illegal in Florida waters. Interestingly, Gator-Woman claims that the largest threat to Florida's indigenous turtle population is that Chinese, a blatantly racist remark. She claims their love of turtle is skyrocketing the price of domestic turtle meat.
     Once you acquire the turtle you can butcher immediately, or some would recommend storing the captive turtle securely in clean water for a day or more, providing feed for the turtle as well. This is to lessen the supposed "muddy" flavor of the meat.
     The proper way to clean a carcass would involve enticing the turtle to bite a stick, then pulling its neck out as far as possible before slicing through as quickly and close to the base as possible, then hang by the tail to drain the blood. Next slice off the legs, tail, and shoulders for the meat. Remove the head from the neck and use the neck meat as well. Some open the shell to remove the fatty lining near the vertebra, or strap, as it is sometimes called. Frequently that step is omitted as opening the shell may not always be worth the mess or hassle. Care should be taken to avoid reflexive movement of jaws and legs which persist long after the turtle is decapitated.
     Most recipes for preparing turtle meat call for creating a soup, stew, or possible deep-frying. Some cook with the bones, some remove the bones before cooking.
     

Black (Turtle) Bean and Rice Soup with Lime and Cilantro

     This is a simple Latin American soup made with readily available ingredients that store well for the long term. Black beans and cilantro can be grown fresh in your garden, and limes may be grown. Lemon could be substituted, and Meyer Lemon is a variety that can handle the temperatures in central Florida very well. Or what about sour orange? or unripe tangerines?
     If you are cooking the beans from dried stores, about half a cup of dried beans is all this recipe calls for, give or take a few.

Black Bean and Rice Soup with Lime and Cilantro(makes 6 servings, can be doubled for larger Crockpot or stovetop cooking, recipe created by Kalyn)

Ingredients:
2 cans black beans with liquid
2 cans diced tomatoes
1 1/2 cups chicken stock or canned chicken broth
(use 2 cups for stovetop cooking)
1/4 cup finely chopped onion
1 tsp. minced garlic (or more)
1 T ground cumin
1 T dried oregano
1 1/4 tsp. ground chile powder
1/4 cup white long-grain rice (not more!)
1/4 cup fresh lime juice (2 limes)
1/2 cup chopped fresh cilantro (or more)

Instructions:
In small Crockpot or 3 quart sauce pan, combine beans, tomatoes, chicken stock, onion, garlic, cumin, oregano, Ancho chile powder and Chipotle chile powder. Cook on low for 6-8 hours in Crockpot or 1-2 hours on stove, until tomatoes are disintegrating and beans are starting to fall apart. On stovetop, you might need to add a little water during the cooking time.

When soup has reached the consistency you want, raise heat slightly or turn Crockpot to high. Add 1/4 cup rice and cook until rice is done, about 30 minutes for either Crockpot or stove.

Lower heat again, add fresh lime juice and cilantro and cook 5 minutes. Serve hot, with additional fresh lime pieces for each person to squeeze into soup.

Simple Cooking at Home

     Our world has changed a great deal since Ms. Givens wrote that anti-feminist statement in the 1940s. Since then we've seen the rise of our great economy. Oil, plastics, refrigeration, transportation, and feminism leading to a changing workforce have modified our way of life. Many a young and old person no longer have the skills or desire to cook at home.
     I think the best reason for cooking at all is so that you can control exactly what goes in to your own food. In the world of peanut, gluten, and iodine allergies this is important, but also from the chemical and preservative perspective as well. You can actively control how much sodium, fat, and oil goes in the meals. You can actively exclude high fructose corn syrup, maltodextrin, MSG, sorbitol/xylitol, and other irritants. You can choose between organic or genetically modified, a choice somewhat lacking in most restaurants. Local versus imported. Food colored or irradiated. Fresh or canned or frozen.
     My mother likes to cook at home to save money, but she also likes all of her recipes to be easy to make, so she tends to have a handful of raw ingredients and some pre-made ingredients in her recipes. Pancakes from mixes. Pies from canned, pre-sugared filling. Corned beef and cabbage made with canned meat. Store-bought ice cream.
     I don't necessarily disagree with her philosophy in that it works for her and she likes doing things that way. It looks to me to be a generational issue, as lots of young women returned to the workforce they wanted to have their boxed cake batter and eat it too. I just think its a bit of a consumerist mindset, or lack of mindset, to think we need to have pancake batter to make pancakes is just silly. (Make babies and go shopping!)
     It has been proven the nutritional content of every food declines with time and processing, except in the special case of fermenting. Freezing, canning, cooking, storing, dehydrating; all suffer some loss of quality over fresh.
     The solution of the perpetual question of what are we to eat is simple. It's all about pairing foods to create a balance, then sprinkle a little bit of your preferences on top. Eat a variety of foods every day, it doesnt have to be expensive if you're careful.
     Beans pair with grains, whole are more beneficial than processed.
     Meat pairs with vegetables.
     Dairy pair with grains.
     Fruit in moderation.
     It is almost always cheaper to buy unprocessed simple ingredients, like sugar and flour, in bulk.

Four o'Clocks, Mirabilis jalapa

Uses : Xeriscaping, Medicinal. Native to : Tropical South America
Although it may be called 4 o'Clock because it is said to bloom in the afternoon at that time, it blooms in the early morning and closes its' flowers in the heat of the afternoon. 4 o'Clocks are perennials that freeze to the ground every year here in West Florida, then in the spring new vigorous plants emerge from tubers underground.
     They grow well in poor soil but appreciate the protection of shade during the dry season. They do very well in shade, but can tolerate full sun with plenty of water.
     The fragrant little flowers bloom for months, and make tiny black seeds that may reseed in other parts of the garden. People have used the flowers as an edible crimson food coloring for cakes and jellies.
    The tender young leaves can be eaten as cooked greens.
    The root was used as a treatment for dropsy (CHF) and as some kind of hallucinogen.
     Not a lot of information can be found on whether 4 o'Clocks can be used as a fodder source.

Sweet Potato


Uses : Edible, Forage, Xeriscaping, Polyculture. Native to : Central South America
     I find that the sweet potato has a lot more to offer southerners than the white potato. White potatoes have been hybridized over centuries to be able to produce a great deal of starch in a short growing season. White potatoes grow very well in the North, but in the South, the sweet potato is king. Sweet potatoes require longer seasons but are able to thrive in the additional heat and humidity that white potatoes as we know them cannot. Known to be a super-food, it is an important source of Vitamin A (carotene) and other B vitamins.
    Sweet potatoes are a staple of permaculture in the South, nothing screams ease of growth and abundance like the big orange spud. The potato itself is edible after cooking, and lower in carbohydrates but with plenty of vitamins and starches than white potatoes. The vines can be used as a fodder for livestock or cooked as a green for your table.
     A study done in 2004 in Vietnam shows the crude protein content for sweet potato leaves to be between 25 - 30%, much higher than most other greens. It suggests that sweet potato leaves be included into the diets of animals as an important additional protein source.
     Due to soil-borne plant diseases, it is recommended by IFAS not to plant sweet potatoes in the same place in consecutive years. Sweet potatoes are perennials if you neglect them, just be aware of the possibly of blights.
     My vines tend to sprawl all over the ground rather than bother with climbing. Maybe they are just a lazy variety. For that reason they are a great ground cover, an erosion prevention tool rather than a plant to be used in a plant guild like the three sister's garden.

Maypop Passionflower


Uses : Edible, Medicinal. Native to : Southeastern United States, possibly originally from Central America.
     This attractive flowering vine, which resembles a southern version of clematis, is a scourge of the southern landscape. It is banned in Hawaii and on the Florida Invasive list. I can't say it is as invasive as the non-native kudzu though, since passionflower doesn't seem to be taking over whole forests at the moment.
     A good deal of thought and research should be done before allowing this plant into your area. According to legend, about twenty years ago my mother wanted some passionflower vine for a side fence in our yard. Against my father's protestations (supposedly). Since that time the passion vine has never left our block, it comes up from seed in different places every year and in the neighbor's yards. Since the majority of my neighbors are retirees and renters, they just leave the vine to do as it will - spread and seed. The vine forms an underground tuber which goes quite deep for a vine, and if the foliage is removed it will be able to return.
     The best way to control passion vine is to pull out the young shoots every week in the spring. It is very easy to spot with its conspicuous triple-lobed or penta-lobed leaves. After the foliage is removed several times the tuber won't have energy to try again. This can be a bit labor intensive. Once the vine is larger later in the season it is nearly impossible to remove, so removing the flowers before seed setting can help.
     It does completely freeze to the ground every winter here in West Florida, even in mild winters. I usually pull out the shoots that come up in undesirable places in the spring and leave the ones that are hard to pull. If a passionflower wants to grow into the cherry laurel trees then good luck, it's not hurting anything there.
     The name 'maypop' comes from the sounds the fruits make when children throw them on the ground or jump on them. In late summer the fruit will set, making apricot-sized green globes with many seeds inside. The fruits are so seedy they are more like tiny pomegranates.    
     The 'passion' in the name comes from a symbolic representation of the Christian trinity some say they can see in the sex organs of the flower. In my opinion it should be renamed Maypop Zombie-flower as it has an unattractive smell and the plant returns from the dead every spring.
     When grown from seed passionflowers make beautiful houseplants. Their long, trailing vines and beautiful flowers are quite amazing. Vining plants tend to be forgiving in watering requirements as well. Do grow from seed in a pot if growing for indoor use as they do not take transplanting well and do not root in water as easily as many other vines.

     Much like the sweet potato, if properly trained the vines could make a very excellent natural privacy screen if you happen to live close to your neighbors. The vine does die down in the winter, which could make it useful for a shade-producing screen or for a pergola.
     The flowers are like bee and butterfly kryptonite. They are hopelessly attracted to the huge, smelly purple blossoms. I've personally seen the rare and mysterious zebra butterfly in my yard thanks to this vine.
     There are over 500 different varieties of passion vine available, the vines are able to hybridize with one another easily so proper identification of your cultivar can be intimidating.
     Passionflower is grown the world over in tropical areas. The most common eating variety comes from Peru and Central America. The fruit is eaten fresh, juiced, jammed, canned, fermented into wine, baked into desserts, etc.
     Remains of seeds have been found in Incan and Aztec ruins. After reading This Paper I have no doubts that the spread of passionflower throughout eastern North America was aided by human hands.
     Extractions from the plant are known to have sedative and analgesic properties. Native Americans made teas with the leaves to help treat insomnia. Since then it has been used to help with seizure disorders, substance abuse programs, and organic brain syndromes. The fruit is high in lycopene and Vitamin C.
     I was unable to find any research about whether it would be safe to use the foliage as a fodder, but I highly suspect it would not be safe in any significant quantities. After the first frost just remove the frozen vines and place in your compost heap.
     

Cavendish Banana


Uses : Edible, Forage. Native to : Southeast Asia
     Cavendish Bananas do not really grow well here in West Florida. Actually they grow very well with plenty of supplementary water during the dry period and protection from freezing in the winter. So I'm saying they need a lot of care to thrive this far north of the Caribbean. A truly beautiful plant, bananas are the idealization of the word 'tropical'. Cavendish bananas are a dwarf variety more suited to the home landscape. It should be planted in the wettest, warmest place in your property, sheltered from cold winds in the winter. It can handle full sun if receiving enough water. High winds will rip the leaves, but the 'trees' seem no worse for wear.
     My father thinks that they need to have two long growing seasons with a frost-free winter in between in order to have fruit. It sounds reasonable, as my bananas have never had a flower and neither have his. When I lived in Riverside, Jacksonville, one of my neighbors had a Cavendish that had flowers and then fruit, and it was beautiful. I can only guess that their yard had a very excellent micro climate.
       Because the fruits of the plant lack viable seeds, propagation is via the new shoots the plant creates like bamboo. It is said that you can tell a plant has been in cultivation for a long time when it can no longer reproduce sexually but requires humans to transplant. Like taro. Actually these bananas have a lot in common with taro as they are grown in similar parts of the world and prefer moist, humid conditions.
     Perhaps most people are pretty familiar with the banana, but did you know the skin/peel is edible as well? In Africa a banana wine is produced, for local consumption only, apparently, and is known for being one of the most nutritious of fermented foods as the wine contains most of the B vitamins and some of the potassium the original bananas had. Dehydrated banana chips are also very nutritious and have a long shelf life if made properly. Plantains, bananas' sister, are used in the same way potatoes are.
     Banana leaves are used in Africa to wrap foods in like a packaging, and as disposable plates. Some people wrap meats in banana leaves before baking for added tenderness and flavor. The leaves can be used for thatching and are frequently used as a natural umbrella. Leaves and pseudostems make a decent fodder for ruminants, but are not complete nutritionally. One source recommends banana pseudostems and sweet potato vines in combination, or urea. Ick.

Michael Pollan about Sustainable Agriculture

      Michael Pollan is one of the foremost speakers about the national food situation currently facing us. His non-threatening persona and charming eloquence make him a popular choice. Most importantly, he advocates many of the same ideals that I advocate, the least of which are that people need to get back to producing healthful food and eating locally.
     This video is an exerpt from a larger one that he made as a follow-up to his book and documentary, an Omnivore's Dilemma and the Botany of Desire. This interview piece specifically describes Joel Salatin's Polyface Farms, a sustainable protein production operation in Virginia. Please comment, criticize.

Slow Coffee

How to brew coffee without a coffeemaker
     It should be noted that I have a drip coffee maker and a diffuser, but I still prefer this method because it's so easy. And it uses no electricity. It creates very little mess. There's no heat or steam warming up my kitchen either.
     Simply take an old jar with a lid and add your coffee to it as you prefer. I usually use about four teaspoons for this size jelly jar. Then fill the jar all the way to the top with regular water from your tap or filter. Put the lid on securely, then give your mix a few shakes. Put the jar in the back of the fridge and ignore for two or more days. I usually leave it in for three or four.
     Then when you are ready to drink, grab a cheap coffee filter, filter basket, or heck even a piece of good cheesecloth will probably work. Place your filter into a food-grade funnel, place the drain of the funnel into a carafe or your cup. Shake the mix again, then pour into your filter/funnel contraption. The idea is to get all the grounds and coffee out of your jar and into your filter, then your cup. Take your filter and grounds outside and feed the plants with it.
     I would be cautious not to leave your coffee mix for too long in the refrigerator. Any chlorine in your municipal tapwater should inhibit some bacterial growth, in theory anyway. Coffee has natural oils and compounds which can and do go bad over time, and I'm sure it would be a displeasing ferment. I don't let ours sit back there more than a week, not that it would ever last that long around here.

Jelly Jar Sauerkraut

     There is a glut of literature available about the benefits of fermented food, the real truth is that ferments are something that every chef should know but does not thanks to commercially packaged crap at the grocery store. Sauerkraut from the grocery store is NOT tasty. It is a bit salty and sour, which makes it good for a hotdog, maybe. But the kraut from the gas station and the kraut from the store are missing the valuable probiotics that you get from making it yourself.

     The first time I tried to ferment sauerkraut I used a repurposed old crock pot from a slow cooker. I had the crock loaded with yummy cabbage and plastic bagss of water to weigh down the cabbage. Salted, I put the lid of the crockpot back on and put it in a corner of the kitchen to ferment. Big Mistake. Not realizing the jar needed to be mostly airtight to keep out the tiny black flies that occasionally come in the back door, I lifted off the bags a week later to find tiny fly larvae all over the edges of the cabbage. I was so disgusted I threw the entire crock into the trash!
     Attempt number two: I decided to try a much smaller vessel this time, a jelly jar. I pureed the cabbage in the blender with some water and added about three teaspoons of sea salt, which is far more than is recommended but hey, this is the south, I want to inhibit most of those microorganisms, right? I put a coffee filter under the lid and put the lid loosely on the jar (thinking the flies should have trouble with that setup) and put it on my counter. Three weeks later, skimmed off the pinkish kraut from the top and it smells delicious.       Success.

"The Potato of the Warm, Humid Tropics"

Uses : Edible, Aquaculture. Native to : Unknown. Naturalized to tropical areas worldwide.
     Yes, this is the same ordinary bulb that can be purchased at the big box stores in the springtime. It can be grown anywhere, just about, that has at least seven months of warm weather. It can grow in just about any pretty moist soil, or even mud and shallow ponds, but standing water with no aeration is known to cause poor growth, as is true for most big aquatic plants.
     That being said, I accidentally let mine wilt during a month of hot, humid breezes. I keep a thick layer of mulch over my elephant ears, which I do not have many of at the moment, and the breezes got to them. The largest leaf drooped out over my carport, which just made the plant look sad. That leaf never quite recovered.
     Be sure not to confuse the elephant ear with caladium, which also grows from a bulb. They are completely unrelated plants and caladiums are not edible.

     The leaves and roots are edible with cooking. Apparently there is a calcium crystal which breaks down when heat is applied. The crystal scratches and burns the mouth and throat when eaten raw. It could be good fodder for animals after cooking as well. The leaves can be prepared as you would any green, or traditionally with coconut milk as the Hawaiians prepare it. The roots can be eaten like a potato, for example baked in the oven for an hour. Corms can be mashed and fermented into a paste called poi.
     The roots can be harvested for the base of the taro and the tops replanted. Cut just below the apical meristem. The tricks to this is to only use the corms from the largest, healthiest plants and to cut the corm off below the area where the leaves join the corm so that some corm remains. Then the plant is replanted. Also at this time offsets are separated from the parent to develop on their own. Leaves are usually removed during replanting so just corms and stems are placed in the ground or mud.
     Taro is a known escaped invasive plant in Florida, and the state website says it's illegal to sell or reproduce this plant. Yet I have seen that the tubers can be bought at your local big box hardware store. Why is that?

Well-Depths in Florida

     Though there are days that it seems Florida has more fresh water than we know what to with, that is not completely true. Rainfall is uneven throughout the year, and most of us are not wealthy enough to live on one of our beautiful springs.

     When considering property to purchase, well depth and quality needs to be considered. Some coastal areas will not have potable groundwater, and other areas may have problems with sulfur, uranium, and other naturally occurring minerals. The water will have to be tested, however, most of the state has access to our beautiful 98% pure aquifer, which is completely recharged with rainwater. No rain means a very thirsty state, and according to USGS Floridians have withdrawn 500% more water since the 1950s.
     Wells probably should be used in conjunction with rainwater harvesting. Since the population emigrations to Florida in the 1950s, more people and industry have been drawing from the aquifers, an already fragile resource.  Saltwater intrusion and lake levels dropping, combined with sinkholes, have made that plain. Sinkholes are an open wound of the water system, allowing pathogens in to infect otherwise potable water with contaminants like nitrates. Rainwater harvesting from rooftops also requires no electricity for pumping.
     There is no one resource for obtaining information about water quality for an area short of drilling and hoping the sample comes back clean. Neighbors may be able to give you information about their wells. Assume all local golf courses are not going to give you information.
     In general, the aquifer is between 100 and 200 feet down in most of central Florida. The ground is frequently a layer of sand on layers of limestone and dolomite. Rainfall does affect groundwater levels, in a period of intense drought hundreds of shallower wells near Pensacola had to be redrilled or moved inland. Underneath some areas the aquifer is under pressure, which might result in artesian well once drilled. Artesian wells have special regulations regarding reporting and capping (of course).
     Shallower wells, about 50 feet deep, are used most frequently for irrigation (think golf courses, nurseries, and citrus farms) and usually have lower quality water than the deeper wells.

Zebra Aloe, Aloe zebrina, Aloe maculata

Uses : Medicinal, Edible, Xeriscaping, Forage. Native to : Africa.
     This little survivor is a perennial here in Florida. Its thick, fleshy leaves allow it to store moisture during periods of irregular rainfall. It quickly, probably yearly, sends up offsets via shoots from the roots. Zebra aloe is a short little plant that will send up large showy pink flowers on a somewhat alien-like stalk that looks very little like the plant itself.
     These little aloes hybridize easily with one another, making them very difficult to concretely identify.

     To harvest the edible part of the aloe, first break off a leaf, then cut the skin off very carefully. Take the meat and drop into a smoothie (aloe is eaten raw to maximize the anti-inflammatory properties. I suspect that eaten in large quantities aloe might cause diarrhea, so please be mindful, particularly if giving to your animals, who might not like it anyway.
     The sap can be squeezed from the leaves and used as a soap. I have also used the sap in very small amounts for sunburn relief, and it works just as well as the store bought stuff.  It might be even better because it has no coloring or additives.
     I was able to find a very interesting looking recipe for aloe wine, but was unable to locate the original article the recipe was sourced from... here's the recipe. It looks like it would probably make about a gallon of wine.
It’s made with 5 stalks of aloe vera, 2 pounds of granulated sugar, 1/2 cup of raisins, 8 cups of water, 1 teaspoon of yeast, and the juice of one orange. Peel the aloe and cut it into cubes and add it to a container with the raisins, orange, and sugar. Next, boil the water and pour over the aloe vera mixture. Then, dissolve the yeast in luke warm water and pour the yeast into the cooled aloe vera mixture. Cover and let it remain for 21 days, stirring occasionally. Strain and put the wine into a sterilized bottle.

Crinum Lily, Crinum augustum

Uses : Xeriscaping. Native to : India and Asia
     The crinum species is a large family of flowering bulbs that look similar to daylilies albeit larger and more tropical. They are actually closely related to amaryllis, and can grow very well in locations that amaryllis succeed in. Like many bushy non-natives, they do better in part sun rather than full, unless you intend to supplementally irrigate.
     Unfortunately this flowering beauty is not edible and cannot be used as forage for livestock, as it grows so well here in barely amended sand. None of the amaryllis family are edible.
     A thin layer of mulch does benefit the plant, and it will, in time, produce young bulbs that you can transfer elsewhere or give away to your friends.

Loquat, Eriobotrya japonica


Uses : Edible Fruit, Forage. Native to China.
     This is a small tree, maybe 20-30 feet tall, but can easily be trimmed into a dwarf style with yearly pruning after fruiting. It is not native, but like the mandarin orange, it can withstand the mild winters in most of Florida. It has been reported that it will not set fruit north of Jacksonville, and I can say that I have never seen loquats growing in Duval, but it could be unknown there.
     It sets its flowers in the fall and fruit ripens in the spring. The fruit can be eaten fresh, with the seed removed, or cooked into jellies, added to sauces, or used in any way you would use an apple or pear. They can be dehydrated or canned, with the seed and peel removed for canning. The fruit should be an orange color and soft when fully ripe, if hrd and yellow it is not ready. The fruit ripens on the tree and will not ripen adequately once picked.


     I suspect the reason not more people enjoy this delicious fruit is that it has a shelf-life of about a week. I have seen it at the farmer's market just once, and never in the grocery store. Usually all the fruit ripens on the tree at about the same time, much like its cousin the apple. Also wine can be made from the crushed fruit in much the same way as you would make apfelwein. A winery near Gainesville makes delicious loquat wine, but it is only available locally.
     The tree does not seem to have problems with pests, unless you consider birds a pest when they ninja all your ripe fruit.

4 pounds fresh loquats
2 1/4 pounds sugar
Water to one gallon
1 campden tablet (crushed)
1/2 teaspoon pectic enzyme
1 teaspoon acid blend
1/4 teaspoon grape tannin
1/2 teaspoon yeast nutrient
Wine yeast

Tomatoes in Florida, Solanum lycopersicum

Uses : Edible Fruit. Native to : Mexico, Peru
     There is a lot to talk about when it comes to tomatoes, but only a fraction of it is relevant in Florida. Information is readily available from IFAS and even the public library regarding pest control, so we won't go into that here. And the pests do love our tomatoes!
     Perhaps the most important part of tomato growing is the timing of planting the seeds. Whether you start seeds inside or buy seedlings or sow directly in the ground, it is really all about timing. I would say tomatoes are not for the person who puts things off, because late planting will delay flowering and fruiting which will make tomatoes not really worth growing.

     Here we can grow tomatoes in the early spring and late fall. The plants do not tolerate the hottest part of the summer, though your season can be extended into the beginning of the summer by moving your plants into a microclimate, which is why we have had so much success with growing our tomatoes in five gallon buckets. A sheltered part of your yard away from the warm breezes is ideal, and shade, especially midday or afternoon is preferable. Tomatoes need loose soil that drains well, with plenty of nutrition, and frequent watering when the temperatures approach the 80's.
     I personally think cherry tomatoes are much better to grow here than the traditionally larger varieties, as they produce an edible fruit very quickly after flowering, while the larger varieties need more time to grow out the fruit. This additional time factor gives the birds, squirrels, and bugs more time to take advantage of your delicious offering.
     Starting seeds indoors is not necessary but I highly recommend it. This last year we started the seeds in the five gallon buckets on the back porch, and brought the buckets indoors on the nights that dipped below freezing. This fall we will probably do the same, and then set the buckets out for some shady protection at the beginning of September. Another benefit to the bucket system is that we put in potting soil from the store - not something I would normally do, but the potting soil already has fertilizer added.
     Saving seed from season to season is easy to do at home in your kitchen, by harvesting from your best fruits and washing very thoroughly, then drying. Most plants are self-pollinating so even one successful plant will give you more seed to work with next year. Store seeds dry and away from light. Tomato seeds are great gifts!
      The plants are members of the nightshade family, and so are inedible to humans and animals. Dead plants are only good for chopping and composting.

Dehydrating Food on the Cheap

     Having a curious mind will get you everywhere. While stumbling around the internet I was able to find some fascinating information about using solar cookers. There are many different kinds of solar cookers available to build yourself or purchase. There may even be a market to produce solar cookers for sale, if someone were enterprising enough.
     The best part about using a solar cooker is that it uses no electricity at all. It creates no heat in your kitchen for your refrigerator and air conditioner to fight against. It is carbon-neutral, green technology that can be cheaply made and acquired, that will pay for itself in savings after a few uses.
     I am unclear on why so few people use solar cooking here in Florida and elsewhere around the United States. When the weather is pleasant it is good to just be outside, and most solar cookers require very little tending. Sunlight, is much more plentiful and cheaper than charcoal, firewood, or propane.
     The most basic solar cooker that I know of has materials I was able to get at the local W. Mart for under 10 USD. It really has only two necessities, a vehicle sun visor and some self-adhesive Velcro from the craft department.

     Wrap the vehicle sun visor into a cone with the reflective side on the inside. Place the Velcro carefully so as to attach the sides to one another. Ready to go, and portable.
     When dehydrating, follow the conventional rules for dehydration. There are many great videos online, apparently spearheaded by the Mormon movement. Cut the food as thinly as possible, then into as small of pieces as possible. I placed the apples in between two splatter guards that I got for Christmas. I put the splatter guards on top of a dark bowl, then out in the sun at about 11:00 am. I did end up turning the cooker about every hour to track the sun - about 5 seconds worth of work. After 4 hours, half the apples were completely dry. The rest I put out the next day to finish up.
     The secret to dehydrating well seems to be all in the cutting. A lot of people recommend using things like lemon juice or soy sauce, and you can if you wish. But the magic is in the slicing.

Windshield Shade Solar Cooker

China Berry Tree, Melia azedarach, Persian Lilac

Uses : Firewood, Xeriscaping. Native to India.
     This is an extremely fast-growing tree that has naturalized itself all over West Florida. It is much hated by some, because of its fast-growing nature it can and will drop limbs without notice. It is susceptible to rotting from the inside with no visible marks from without. Storms and even children can tumble large limbs down.
     That aside, they aren't all bad. They are extremely underutilized as fast-growing shade trees, which could be quickly providing screen while more permenant, slower growing trees take hold nearby. It is nothing to dig up a young sapling and stick it where you wish in the landscape.
     Another frequently overlooked use is for lumber and firewood. Their live fast die young philosophy makes them ideal for this purpose, perhaps more so than even the native pine trees. More research should be conducted as to whether China Berry trees would make good firebreaks on traditional tree farms.
     The leaves and berries are toxic if eaten in large quantities. Birds snack on the berries but it seems to not be a preferred source of sustenance, so if planning a garden for the wildlife China Berry might not be a great choice.
     The seeds sprout readily in sandy soil much like Cherry Laurel.

Traditional Agriculture Doesn't Work in Florida

     You know what Florida has a whole lot of? Sunshine, humidity, sand, and people.
     A person might logically conclude that sunshine is really all you would ever need, because crops can't grow without it. That's true, plants can't grow without light, but there is so much more that they need in addition to light that light alone does not make Florida the perfect place to grow crops. Florida is blessed with an extremely short cold season, so short that strawberries and tomatoes frequently survive the hours below freezing south of Tampa.
     Sandiness can be a good soil characteristic for plants that need excellent drainage. Most vegetables do need adequate drainage, and plants that "burrow" into the ground, like peanuts and potatoes, do very well in sand. Unfortunately most of our sand lacks beneficial organic matter in quantity enough to support beneficial nematodes and worms, which help plants. Any wimpy tomato or squash will quickly become food for root-knot nematodes, grasshoppers, aphids, and dozens more.
     Virtually all the produce in Florida is treated with insecticide in some form or another, even the organics. This may or may not be a bad thing depending on how you view it, but it is true. The only way to avoid the chemicals is to grow it yourself or be willing to eat strange-looking fruits and vegetables. Even our delicious citrus isn't exempt from this truth, which is why something to the tune of 95% of all citrus grown in Florida becomes juiced. No one wants to eat an orange with canker on the peel even though it may be delicious.
     The solution - eat what can grow here and grow it yourself, or buy local.


Pink Purslane, Portulaca pilosa, Kiss-Me-Quick

Useful for : Forage, Food, Xeriscaping, Groundcover. Native to : Southeast United States
     This diminutive succulent is an annual in West Florida. Every spring the little plant appears from tiny black seeds the size of poppy seeds in bare sands on roadsides and poor soils. It's fleshy leaves allow it to store water so as to thrive where other plants cannot. The tiny flowers are beautiful on closer inspection.

     The nutrititional value of the purslanes are well documented. The plants are high in vitamins and omega 3. Native Americans used the plants for its medicinal value as well. It has anti-inflammatory properties and was used to treat fevers and as a poultice for burns.
     Its diminutive size and drought-tolerance would make this little plant perfect for a rock garden.

On Permaculture

     Permaculture is the idea of creating a self sustaining ecosystem with no human inputs (work) that produces a bounty for the landowner. This bounty could be in fruit, vegetables, meat, eggs, firewood, fish, or all of the above. Many property owners are interested in creating a permaculture to efficiently and sustainably use their land.
     A lot of people get caught up in individual aspects like swaling and food forestry yet lose sight of the big picture. Permaculture can be created on any size piece of land. The biggest, hardest part of permaculture is deciding what you want to do with the land and never losing that ideal.
     I think when people move to Florida they usually don't know what they are getting into. Traditional northern gardens where you plant your strawberries and pumpkins in the spring and harvest in the fall simply do not exist here. The bright sun and high humidity bakes most vegetable plants, so gardening for food must be creatively timed around the seasons.
     A much better approach is to plant perennial food-producing plants that tolerate the conditions in your area along with supportive plants, like for example nitrogen-fixing legumes. Sweet potatoes and prickly pear cactus are two great examples.
     Native plants that benefit your ecosystem should be encouraged, not removed. These plants are already well-adapted to the sand and heat. Non-natives that provide no fodder, nitrogen-fixing, edible food, fencing, or firewood should be coppiced and mulched as the caretaker implements his or her permaculture.
     One of the hardest, if not the hardest, parts of starting a permaculture is identifying the plants you already have before jumping to replace them. There are many great plant identifying websites out there, but many do not have pictures or have misleading information about the care of the plants listed. A lot of the commenters on these websites do nothing but complain about how invasive some native plant is. Those people should go live in the city surrounded by buildings and grass, because they won't be happy with anything else. Nay-sayers abound in our lives, just listen to them, smile, and nod, then go do what you want to do anyway. And research your plants; if it's invasive but beneficial, please invade!
     On where to get plants... a complicated question. I have had tremendous luck with the plants from the Spring Hill Garden Club. The plants they offer for sale are disease-free and well-rooted without being rootbound. When you buy from Home Depot and Lowe's it's dicey, plants are usually expensive and rootbound, but the year guarantee kinda offsets that. I have had a lot of annuals die out quickly. Another great place is the USF Botanical Garden spring and fall sales. Vendors from all over West Florida bring an amazing variety of plants. The very best way to get plants is to propagate your own from healthy plants, but this is a skill which takes some practice. What better time to start than now?
     As far as I know, there are no permaculture homesteads in West Florida. There are several CSA's in every county, and these are all polycultures and should be supported. Homosassa Springs State Park grows much of the feed for their animals on-site in the form of duckweed. It's a fun place to take the family in the cooler times of year to see the manatees.
     There was a family that was working on a true permaculture homestead in Dade City, but their blog says that last year they were forced to sell their property. I suspect one or both were laid-off. The young man, errr, I guess he must be about my age, did a great deal of research into good plants for the area for food forestry and aquaculture. I'll put up a link.
     Personally, I am doing a good deal of work on my suburban lot and looking to purchase 10 acres in Citrus county, or maybe Sumter or around anywhere I suppose, for camping and permaculture and hunting. I have had tremendous success with peppers and tomatoes here in Spring Hill, and we are building rabbit pens in the back to continue that success. Here in Spring Hill it is forbidden to have fowl even though it is a bird sanctuary.
     Research. Listen. Figure out your own Big Picture, work slowly toward it. Don't get distracted into the little things or by nay-sayers.

Creeping Beggarweed, pros and cons

Uses : Forage, Cover Crop, Nitrogen Fixing, Xeriscaping, Ornamental. Native to : Coastal Southeast
     (Desmodium lineatum/Desmodium incanum)
     This beautiful little plant is much vilified by gardeners and mothers alike. An open mind is helpful when dealing with native plants, they were here first and aren't available at garden centers.
  • Beggar's Tick is a nitrogen-fixing legume. The natural bacteria that congregates around the roots of the plant fix atmospheric nitrogen and turn the nitrogen into a plant soluble form. When the plant dies the bacteria and plant roots decay and release nutrition.
  • Beggar's Tick loves growing in very poor soil and bare sand. Disbelieve the plant profile on Dave's Garden, which seems to be the same for every plant in existence. Beggar's Tick thrives in an acidic soil with low moisture and is a perennial
  • Beggar's Tick has amazing flowers. This little plant has bi-colored leaves and in late spring or early summer will shoot up a little stalk with almost orchid-like pink/purple flowers.
  • Beggar's Tick's taproot and diminutive size make it ideal for a small rock garden. The taproot will burrow into the rocky area, aerating. When the plant dies the organic matter will be left to improve the rocky area.
  • Beggar's Tick has evolved a unique method of spreading its seeds. It can't be a coincidence that they are frequently found near sidewalks and roadways.


Cherry Laurel, Prunus carolinian

Useful for : Shade, Xeriscaping, Wildlife Habitat. Native to : Coastal Southeast United States.
     This beautiful evergreen native has a terrible reputation due to its prolific seeding and runners. The seeds germinate readily even in poor soil, which makes it simple to transplant the tiny trees into more desirable locations.
      The full tree itself is what I would consider a small tree or shrub, but can possibly get as high as 40 ft, though rarely does so when grown out in the open in full sun. The tree grows very well in sand and is very drought tolerant.
     Every winter visiting robins from the north invade my trees to eat the big black berries (about the size of blueberries.) It is well documented that the leaves, stems, and seeds of cherry laurels are high in cyanide, which is toxic to all mammals, but very little information is available about whether the de-seeded fruit is edible or not. Birds eat it, but their metabolism might be able to handle some cyanide while ours cannot. I did taste a fruit, and it was sweet, but I was too scared to eat it!

     A great place to use this tree in a landscape is anywhere that you might enjoy seeing birds, such as outside a patio or kitchen window. It grows quickly so is good for fast shade around your home. It makes a great big hedge which will widen and thicken over time, due to the runners.
     I will keep looking for more information about the fruit being toxic. IFAS says that "the fruit is suitable for human consumption" and that squirrels eat it. I have never squirrels eating it, but that doesn't mean that they won't.
     Supposedly a green dye can be made from the leaves, and a dark gray to green dye can be made from the fruit.
